I am considering using a Xiaomi.eu ROM on my Mi Note 10 Lite, however I have several apps that dont work when they detect root.

Does installing the ROMs trigger those verifications?

So, I have another question : should I get a MIUI 11 or 12 ROM? Will MIUI 12 use more RAM/CPU/battery?

MIUI 12 is the latest release and contains numerous improvements over MIUI 11

In the tutorial, it says

Does that mean I lose all my data?

Yes you will lose all your data

Copy all files on your internal storage to PC

As for apps, You will need to reinstall apps after you flash Xiaomi.eu ROM

IMPORTANT
make sure you have unlocked your device bootloader before you try installing Xiaomi.eu ROM
