After doing much research, I finally took the plunge and flashed my ROM back to the latest China stock ROM. I used the XiaoMiFlash app to revert my unlocked phone to stock. There was a heart stopping moment when the device rebooted after the flashing process where it got stuck at the boot screen but everything was fine after I powered it off and on.

Much more stable than the 6.9.8 EU ROM which was causing a major wifi issue on my Redmi Pro as well as some other random errors every now and then. For a noob like me when it comes to flashing MTK phones, there were alot of different articles out there on how to flash it and actually adds to the confusion. However, for the the benefit of noobs like myself, I decided to post this based on my research.

There are basically 2 methods to flash the phone in fastboot mode back to stock. The phone's bootloader needs to be in an unlocked state.

To validate that the phone is unlocked you need to install the 'Minimal ADB and Fastboot' application onto your laptop/desktop and hook up your device via usb to it once the application has been installed while your device is in fastboot mode. Run the relevant commands (fastboot oem device-info)
from the directory where the application is installed from the command line to validate if the bootloader is unlocked. It can be downloaded from here. https://devs-lab.com/download-minimal-adb-fastboot-tool.html

To unlock the phone. http://en.miui.com/unlock/ You should receive a SMS from Xiaomi in a day or 2 with the link to download the unlock app once you fill out the e-form and submit it.

1. Using XiaoMiFlash application (this is probably the easiest way without having the hassle to install MTK drivers) http://api.bbs.miui.com/url/MiFlash
You just need to download the official fastboot ROM for the phone from Xiaomi and decompress it to a folder on the same drive as the XiaoMiFlash app. I tried putting the image files on a different drive and it won't be able to pick it with the flash process completing in 1s. The normal duration for the flashing process to complete is roughly 200s. Just follow the instructions Xiaomi provided here and you should be good to go. http://en.miui.com/a-234.html

2. Using SPFlash which is not really meant for noobs http://spflashtool.com/
This method requires you in install VCOM and CDC and ADB drivers on your Win 7/8/10. You also need to disable driver signature signing to be able to install those drivers on your workstation. This video, even though it is in Indonesian, is actually quite helpful. The video creator has added English captions at critical points of the flashing process in the video so it pretty much self explanatory.
