It's down to personal preference at the end of the day. Did you get the Mi 6X for MIUI? If so go for Xiaomi.eu. Do you prefer a stock Android? If so go for Pixel Experience.

Xiaomi.eu ROM weekly is my ROM in this moment, but pixelexperience with android 9 is very good too
