X10i - Where's my stuff?

I'm a Newbie to this ROM - and generally useless with technology. However, I had no problems rooting and installing this ROM. Everything is working fine but, I can't uninstall 3 of the system apps (which are identified in Chinese script) and I can't seem to run Tittanium Back up pro. I have Angry Birds on my SD card but again, I can't access/find them.

Please help!
