Xiaomi.eu - Can Someone Please Explain?

Hi all,
I've Bought a new Redmi Note 3 pro about a year ago (from a store), and recently i noticed i'm not getting any MIUI updates.
After checking my MIUI version (I didn't really payed attention to it before) I found out that my phone was pre-installed with a xiaomi.eu variant of MIUI, xiaomi.eu 7.2 | Stable 7.2.5.0(LHOCNDA) to be precise.
Can someone please explain why did my phone came with this MIUI variant?
It was also mentioned on the package that it includes FOTA updates, what does it mean?
How can i get MIUI updates?

Xiaomi.eu ROMS do not feature automatic /online updates due to various reasons:
FOTA = firmware over the air
You have to manually download and flash, see section ROM DOWNLOADS
Some facts about OTA delay:
  • OTA packages are always same as posted here, so FULL ROM (400-1000MB)
  • Installation via OTA is same as you do, so Updater - Menu - Select installation zip
  • OTA is uploading into Xiaomi china servers which are very slow for download and upload (usually 30-40kb/s for uploading over 10GB) so I have to upload them always at night one by one and I dont have time for doing that every week for 30 devices... Unfortunately OTA account is binded to my Xiaomi account so nobody else can do that instead of me...
  • So we decided to STOP OTA support at all.. you have to download ROM manually and install via Updater - menu (...) - Select installation package - reboot (You will not loose your data)
 
I guess things are starting to make sense now, so thanks.
I still don't get if these ROMs are xiaomi official, and if not - how is it possible i got it with my phone out of the box.
