The latest Max 3 (Nitrogen) EU Rom comes bundled with the the latest TWRP 3.3.1 from wzsx150.
And this is an Android 10 settings problem and has nothing to do with TWRP.
So!
If it is the latest twrp it should encrypt at boot, and not needed to encrypt via settings.
Just check if any other people claiming for this in the topic here.

Mi Max 3 (6/128)
Even on the previous version (9.12.6), while working in the Google Chrome browser, the phone itself rebooted. Today, while driving to work, the phone was connected to the car’s bluetooth and music was playing from YouTube. The phone just picked up and rebooted itself (ver. 9.12.12).
Also, the problem is that when you connect to the bluetooth device, the volume is set to average, you have to constantly increase it.
Thanks.

The EU ROM doesn't encrypt the phone by default like the Global ROM dose. That's why you have to encrypt via settings in Android.

My lavender in settings security says encrypted after flash this rom with the same recovery as max 3. My nitrogen say no encrypted so.. With a custom rom the data must be unencrypted!

The data partition dose not need to be unencrypted with a custom Rom. I had my Max 3 phone encrypted all the time on the Android 9 EU Rom's via the via the Android encryption setting.

Why to lose your phone? With unencrypted data the phone works better.
And I personally never have make a single scratch on any of my phones not loose one of them.. What is a phone, penny to loose? You must don't care about your stuff to lose a phone.

Long screenshot doesn't work on telegram and ig direct.
It starts and stops with a cutted screenshot

In what way does an unencrypted phone work better than an encrypted one?

It's faster. Simple logical. To open an encrypted file or app or photo, takes more time. It's tested.
AES Software Encryption is slow. But now all SmartPhones have Hardware AES Encryption. Even 4 years ago you couldn't see a big difference with the Hardware AES Encryption. And today with even better Hardware AES Encryption you will see even less of a difference.

I got the point now.
In your today situation because of Android 10 TWRP and EU rom that is kept uncrypted you must modify Fstab in order to get back encryption. This is the only solution if you want to protect your data.
Get a fencrypt.zip file and extract fstab from your phone. modify it and add it into the zip file.

I already tried everything, it has nothing to do with TWRP. Fact is that an Android option (encryption) that always worked in the Android 9 EU Rom doesn't work anymore in the Android 10 EU Rom.

No, for me, EU weekly Android 9 rom NEVER encrypted on MI8 SE via settings. It reverted to TWRP or stayed turning forever.
That's why I learned about Fstab manipulation.

I think you have to turn off all locks before you run twrp and then format data, not to sure but I'll try it next update and see if its unencrypted after i flash,be better if its a bit faster

That is interesting. So we have different scenarios on different devices. I hope this setting can be fixed for everyone. :(
