I can no longer edit, delete, discard or save APN settings, as the options are no longer available on either my Mi 10 Pro or Mi 11 Ultra running the latest weekly update MIUI 12.6 21.5.262/7. Previously, I was always able to edit the APN settings to work most efficiently with my carrier, as well as, delete the uneccesary preconfigured networks not applicable to me.

Sounds like the same issue as here:
We can't possibly patch all missing option menus, Xiaomi broke them across the whole Settings app...

I installed the latest stable (12.5.7) and it fixed the problem.
