EDIT: FIXED - Reinstall of "com.android.companiondevicemanager" application via adb fixed the error

I keep trying to put this watch together. It turned out that when I tried to install the regular Wear OS app for testing, all versions crash - the regular one from the play store and the Chinese one from apkmirror.
 
you're not using xiaomi.eu rom, you can't get support for your problem here. Also, it sounds like you need to get xiaomi smartwatch, for your xiaomi phone, you know?

I'm so sorry, dude, I apologize. I would consider flashing back to stock and test if problem persists, if it does, maybe it's a marketing stuff after all, I'd say.
 
With the stock the problem is that it is a phone from China and samsung will not work with china stock rom. On the forums, people write that previous Xiaomi 13 Ultra, 12S Ultra models with Xiaomi EU rom have no problem connecting to Galaxy Watch. Even the store I bought this phone from says that with Xiaomi EU installed, Galaxy watch should work. Therefore, I think there is a bug or something is wrong.
 
Update: I have already received not only a response on the samsung forum, but also from Xiaomi. I also made sure with the local store. All indications are that it must be xiaomi eu system fault. Especially since neither the galaxy plugin works, nor the wear os app in the version from the play store, nor the wear os app in the china version. All of them when launched work, but after accepting approvals they crash.
 
I am not sure what we can do to help you.

You can try to provide logs, but even then, there is no guarantee that the devs will have time to check it, or find helpful information in it, or will be able to somehow provide a solution without having the device at hand.

Else you can try another ROM to see if you get better results.
