To go back to stock, flash stock fastboot ROM using miflashI'm currently on weekly Xiaomi.eu ROM 11/12 and I want to switch to stock because I'm so stressed out with fear of bricking the phone by doing an update. I am on android 11 currently and stock global firmware is android 10, i wonder if I could do it in twrp, (format data-reboot to recovery-mount the ROM with pc-install-format data) and would not get hard bricked?

What you are using is "weekly" developer ROM so bugs are to be expected.
So stay on stable ROM if you don't want issues.
You can always post your issues to the weekly thread to get help and support

I have no experience with Xiaomitool as miflash gets the job done for me.Or maybe I could use xiaomitool V2?
Ugh why did I need to start this custom ROM stuff...They aren't problems with miflash, the problems usually come from user error.
Whichever tool you use, make sure to follow the instructions carefully and you'll be good
To avoid locking your bootloader, make sure to select "clean all" at the bottom right of miflash

No I won't wipe system lol! I don't want to lose twrp and other essential stuff, you just need to format data and that's enough.Going from weekly ROM to stable ROM is downgrade
Reboot to TWRP and format data -> advanced wipe -> Data/System/Catch/Dalvik/Internal Storage
Clean and format all !
Then install the stable ROM.
MiFlash is unnecessary

Oh well, I took the risk and still not a true stable one. Gallery crashes if I keep it open longer than 5 seconds and apps takes some time to load after launching them, worse is some of them crashes constantly and the phone overheats even if it's not under stress...Also interested. I had to go back from Android 11 to A10 because the latest (12.1.3) was unusable for Poco F2 Pro.
- Google Maps closed very often
- headset did not work
- random reboot on rare occasions
- failed getting into silent mode
- random missing notifications
- some apps cannot read notifications for automation
- Keyboard touch sensitivity worse than 12.0.8
- some other bugs
