New user, how to properly use ROM + unlock?

New here
Want to install latest MIUI ROM offered here:

Have couple of questions please -

1. Using mentioned thread, i got to those download locations:

https://sourceforge.net/projects/xiaomi-eu-multilang-miui-roms/files/xiaomi.eu/MIUI-STABLE-RELEASES/
BUT I have no idea which MIUI folder version to choose, nor what file to download from chosen folder.
I have Xiaomi Mi6 Global. What to download?
Or should i use WEEKLY links instead?

2. Bootloader unlock + Decrypting device
My current ROM + root got messed up.. when entering TWRP i see everything is encrypted, although in the past when installing the ROM i've decrypted and unlocked bootloader.
Question is, what's the proper way to:
* Install ROM + Root + Unlocking bootloader + Decrypting filesystem?
Is the way mentioned in the original thread above, will also fix the decryption issues?
In the past i recall i needed to flash file no-verity-opt-encrypt-5.1, is it still needed?

3. OTA Updates - Does Xiaomi.eu ROMs support OTA Updates?
Will those updates break ROOT ? Do I need to fully wipe every update?
