Hi again. Unfortunately the "solution" above turned out not to solve the issue and the HDMI continued disconnecting at completely random times. It's strange because the TV seems to understand that's still connected but the signal is lost. Anyway, I found a definitive solution: a way to roll back to the previous Android 10 firmware. It worked for me and since the downgrade the problem is solved. As the only use for the TV is being a PC monitor, I don't care about any other functionality added of fix implemented in the latest updates, I just want the TV not to lose HDMI signal.

Here's how to do it:
ATTENTION - THIS SOLUTION IS ONLY FOR THE MODELS P1 43, 50, 55", Q1E 55", Q1 75" (Device Model: MOOQ0 (croods))
I TAKE NO RESPONSIBILITY FOR ANY DAMAGE THAT YOU CAN CAUSE TO YOUR DEVICE. USE AT YOUR OWN RISK.
*** DO NOT USE WITH THE P1 32" MODEL! ***
- Download the firmware (Version 5135 - Android 10): https://android.googleapis.com/packages/ota-api/package/0a20356c2d2b8a82b979b213c9d214a1c4cbb8ef.zip
- Put the zip file in a FAT32 formatted USB key. The USB key doesn't need to be empty, just put the file in the root folder.
- Turn off the TV and unplug it from the power.
- Plug the USB key in the Upper USB port on the TV (USB port n. 2).
- Push and keep pushing the OK (the central round key) and the BACK (⇽) button.
- Without releasing the remote keys, plug the TV to the power and wait for the Recovery Screen to appear. Do not release the keys until the Recovery Screen appears (if you're unable to enter recovery mode this way, read the alternative method below).
- In the Recovery menu select "Update from uDisk" and select the zip you previously put in the USB key.
- Wait for the update/downgrade to complete (do not unplug or turn off the TV in the meanwhile. Only if the installation is stuck for more than 15/20 minutes, then turn off and on the TV again using the remote and the installation will continue).
- Select "Wipe data / Factory Reset" in the Recovery menu.
- Select "Reboot system now".
Your TV will reboot in a brand new Android 10 installation.
If you want to update the TV manually again, you can follow the above procedure with those firmwares:
Version 7981 (Android 11):
https://android.googleapis.com/packages/ota-api/package/1146b7e200a76962997d313754f8de62fe6a6a39.zip
Version 8313 (Android 11):
https://android.googleapis.com/packages/ota-api/package/8d73877d01d01c5f746905ef4c2f60b4b2bb7c15.zip
ALTERNATIVE METHOD TO ENTER RECOVERY MODE
If the previously described method to enter recovery mode doesn't work for you, there is another way to do it using a Windows PC connected to the same LAN/Wi-Fi. Go here ->
https://xdaforums.com/t/tool-all-in-one-tool-for-windows-android-tv-tools-v4.4648239/ and download the Android TV Tools V4. Follow the instructions on the site to install it and connect it to the TV. Once installed and connected to the TV, select 7, then X, then 10, then 2. The TV will reboot into Recovery Mode and you can then follow the above instructions to install a new firmware.
I hope it helps. I will keep monitoring this to help further.
