Sorry to come back on this subject, but I can't encrypt after rom installation. (best case is back to TWRP state)
I understand your position about this point but it is very serious security flaw. It is so easy delete password files in TWRP file explorer everybody should know and understand how simple it is to access into the phone this way!
Don't worry all the other custom rom are made the same, but it is no reason not to consider to find a simple solution for those who mind about their privacy.
PS: I am not skilled enough to built a patch turning that at Fstab level by my own. Should be easier.

It works fine, I do that manually each time...
Saved an updated fstab.qcom file and I simply copy it over...
But the script is a better way.

Thanks for your comments/help.
I've finally reached the encryption graal. It was a bit complicated on my MI8SE because I am a beginner and fstab is no more located in system/vendor/etc. (it is in vendor/etc.) So I rebuilt the zip with my modification and that did the job....
Now the Rom is well encrypted and it is not possible to restart the phone after deleting the pin password file!
Even entering with another TWRP boot, you can flash file but the memory stay encrypted.

Hi all. What if I did set the encryption in the normal way under Android settings menu, and after that I cannot boot to system, only TWRP ? Is it possible to solve this without Formating data?

Try installing fstab.qcom with updated values.
If it does not work, try installing original Xiaomi Dev ROM, encrypt there, install the latest TWRP, and install ROM on top of the original one, this is how I got my device to work with encryption.
