Yes you will be able to select it, but not actually add it to the app as it will throw a "can't add this card right now" error later on.My 2 cents...
What if you ad a payment method through your account on the play website on a computer, not on your phone?
I did this since it was convenient at a time and the option showed later also on my phone to choose from.
(Don't have the 6/128 btw, so could not test it.)
I opened one in MIX 2S subforum but the only outcome is that I'm not the only one and Xiaomi apparently isn't interested in fixing this issue. If I'm not mistaken this bug with inability to add a card to google pay is present on all Chinese and Chinese-based firmwares.

Yes, that's exactly what happened to me. I tried so many times to get Google pay to work on both China dev and EU ROM but has always failed. The safety net check and everything else is all fine but it just appears that I can't add my card. Well I can add my card, but once I enter my details to submit and enable the card, it just loads and says something went wrong ( can't remember the exact message) so I'm forced back to global stable. Google pay worked successfully with global beta, which I used magisk to pass safety net but failed to do so on China and EU. Would be very grateful if they can look into the issue otherwise won't be switching to EU even tho I would love to, have used this ROM on my older devices. lol.. sure.. Android pay works fine on our ROM.. doesn't on chinese ROM.

Yes but you have the global model of the phone. The problem exists only for the chinese modelI have the 6/64 model had official global installed, it worked fine. Switched to EU 8.17 and Google pay works fine.
Only problem I had was that I needed to manually ad the Playstore etc.
I did a full format and did set it up as a new device.
What I did was after flashing EU ROM fill in my Google credentials in the Google app, installed the Playstore and framework apk's reboot and all is fine. Credit card works, PayPal works, bankcard works. Even Playstore credit does get applied correctly.
I don't even have this line in my build.proptry remove this line from build.prop
