On the latest rom 8.8.9:
GPS still stops working after a while - I've tried changing the settings in a-gps to server:7276 and address: supl.google.com
Google pay worked in the previous version 8.7.26 , after this update it won't allow payment
Reboot in power menu causes some half shut down situation - to turn on again requires long press of power button
Gmail sync in fact most sync apps don't actually sync unless you open the app.

i think its not a xiaomi.eu issue, more than a miui10 issue. have found a lot of threats with your decribed bluetooth issue, i've the same on mine but it was already in 8.7.26 present

Currently my Phone still fail the safety.net test BUT ! i chatted with a google employee today regarding this google pay issue and he told me that my device is fully compliant with google pay and it should no problem to pay with it. I doesnt had the possibliby to pay with google pay yet.

In Redmi note 4x the Android location provider loses the right location and we have the same reboot issues
