Yes, you need unlock bootloader.

Yes, the payments are working on this update, but you must change an option for NFC:
Settings -> NETWORK ...More -> Select Wallet -> using HCE wallet

No! You dont need unlocked bootloader.

Root is not required, it is up to you, but ROM is not rooted by default.

I can't update via updater or via recovery. By using recovery after reboot I see a drawing showing a smartphone and one usb connector close to be connected.
Last week I have used adb on PC to install 6.8.25
Someone can help me how to solve definitively this problem?

It seems you have lost twrp recovery and you have got back MiRecovery. Install twrp again via fastboot mode using ADB command.

The second one for MIUI8, so if you use MIUI8 then install the second twrp version
